Addictive and Rewarding

Yes, they are! It only takes one step for you to start and a lot of steps for you to keep going. There will be times of failure but you just have to get back up and never give up. We all fail sometimes it doesn't mean anything it just means you are human and this isn't an easy journey. I fail, I cheat, I get discouraged, I feel like giving up sometimes BUT then I remember why I started and I keep pushing through. Good habits are much more rewarding and it sure as hell worth it! Besides feeling great who doesn't want to look good in a bikini 😊😉😜

Happy Motivation Monday!

The Benefits of Peppermint Tea

As we know drinking tea has so many benefits. Peppermint tea has many benefits not only does it help with weight loss but it also aids with stress. This tea also has wonderful aromatherapeutic and topical benefits, too!

Here are some of the great benefits you can get out of a cup of peppermint tea. Peppermint tea is a great source of menthol. Menthol aids with stomach issues like nausea, upset stomach, vomiting, and bloating. Whenever you feel gassy or bloated peppermint tea can help alleviate bloat. It helps gas flow freely and quickly through the intestines which prevents it from backing up in the bowel.

Peppermint tea can also help you relax when you are stressed out. So next time you feel stressed or anxious brew yourself a nice cup of peppermint tea to help relieve stress and anxiety. It will also help with headaches.

The menthol in peppermint tea can also help allergies οr colds. It liquefies mucus, therefore, acts аѕ аn expectorant, аnԁ іѕ аƖѕο useful fοr pain іn thе throat. So next time уου hаνе a сοƖd try peppermint tea and add a slice οf lemon to complement the tea to help alleviate your cold.

Peppermint tea wіƖƖ also reduce thе unpleasant smells in the mouth caused bу smoking, garlic οr onions. We all know mouth wash doesn't help with that so next time try peppermint tea just add ice to cool it down and rinse. I am definitely going to be trying this one I love eating garlic things but hate the garlic taste that stays behind lol.

Another perk of drinking peppermint tea is clear skin. It clears your skin from acne and grease. That is a great tip especially for people that have greasy skin which causes acne. I know I am one of those people especially as the weather gets warmer. Besides I think anyone would agree that having clear skin would be a major benefit.

***As usual always consult with your doctor first especially if you are taking medications. Do not ever exchange your medicine unless you speak with your doctor first!***

Banana Walnut Oat Muffins

Since I been making my own healthy recipes I wanted to make my favorite muffin which is banana walnut muffins, but healthy and fresh from the oven. I remember I always use to love buying them from Dunkin Donuts, but as we all know that's not a healthy choice because when I really started thinking about it they add a lot of crap and who knows how long it's been sitting there NO THANK YOU!

What I did was look at a base muffin ingredients and I found the ingredients to make a basic muffin then from there I went through trails of making the muffins until I got it perfect. I also read tips on how to make moist muffins just like there are tricks to making moist cake there are also tricks to moist muffins too. I found that using Greek yogurt and applesauce is what keeps it soft and moist. Then from there of course I just substituted the bad things for the good things.

These muffins are great for breakfast or as a snack. You can also add it to your healthy eating without the guilt. Just so you know the nuts can be substituted for other nuts or you can make it with no nuts, which is what I had to do because for some reason my wife did not want the nuts in hers... Go figure lol. Well I hope you enjoy these muffins as much as my family and I do.

Please if you try my recipes always leave some love and I would love to see your pics. I love getting feedback on things I make.

Banana Walnut Oat Muffins

INGREDIENTS
Dry Ingredients:
  • 3/4 cup white all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 cup old fashioned oats
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon

Wet Ingredients:
  • 1/3 cup unsweetened vanilla almond milk
  • 1/2 cup Greek plain yogurt or Greek vanilla yogurt
  • 1/3 cup unsweetened applesauce (if you buy them already packed in a cup just add the whole thing it's 1/3 cup)
  • 2 tbsp. honey
  • 1 tbsp. maple syrup of choice
  • 2 tsp. pure vanilla extract
  • 1/2 cup brown sugar
  • 1 cup mashed bananas
  • 1/2 cup walnuts

Preheat the oven to 400 degrees. Get your cupcake pan and spray it with cooking/baking spray. Set aside.
  1. In a mixing bowl place all the dry ingredients then put it aside so you have it ready for when you mix the wet ingredients in.
  2. In a separate bowl mash the bananas or if you prefer you can put it in the food processor. I prefer mashing it with a potato masher because it leave it a bit chunky.
  3. Mix the wet ingredients in a separate bowl until all the ingredients are combined then add the bananas and mix it well.
  4. Add wet ingredients to the bowl with the dry ingredients and whisk it. Do not whisk it too much because then your muffins don't come out nice and fluffy. It kind of weighs it down.
  5. Get ready to add the muffin mix to the pan. I used my 1/4 cup to make it easier to pour it in and it's just about the right amount for your cupcake pan. Don't over fill it, but I like to fill it almost to the top.
  6. Place muffins in the oven. Set your timer for 5 minutes. After the 5 minutes are up bring down the temperature to 350 and set your timer for 12-15 minutes.
  7. Toothpick test your muffins if it comes out clean they are ready if not leave it for a few minutes.
Once they are done VIOLA they are ready to enjoy!

Loaded Turkey Chillicious Baked Potato

I came up with this quick and easy recipe because not only did I want to make something quick and easy for dinner, but since I LOVE my turkey chili I wanted to make a loaded baked potato with a healthy twist to it. This was actually the first time I used the "potato" option on my microwave. I must admit it was quick and actually soft. The only thing I must warn you about is the mess it leaves behind. You may want to cover it lol. This a great dinner you can enjoy with your family and it's very kid friendly.

Time to cook: Aproximately 25 mins - 1 hour
What you will need:
  • 4 medium red potato or russet potato
  • Lean ground turkey
  • 1tsp olive oil
  • 2 tbsp of minced garlic
  • 1/4 cup scallions
  • 1 medium carrot
  • 1/4 cup red bell pepper
  • 8 olives (sliced)
  • 1/4 cup vegetable stock
  • 1/4 cup Goya tomato sauce
  • 1can of low sodium red kidney beans
  • reduced fat sour cream or Greek yogurt for topping (optional)
  • Spices: kosher salt, Badia complete seasoning, chilli powder, pepper, and paprika

Directions:

Poke holes in the potato with a fork or a knife, then cook in the microwave using the potato setting  (if your microwave has that option) until potatoes are soft and cooked through (about 8-10 minutes on high for 4 potatoes). If you don't have a microwave or that setting, bake the potatoes for about 45 minutes at 400°F.

Prep all veggies chop to desired size. As for the carrots slice and then cut in fours.

Place turkey in a large non-stick skillet. Let the turkey cook in high heat until brown adding the seasonings as you go along. Once fully cooked take it out and set it on the side.

Reduce fire to medium and add olive oil to skillet. Add scallions, red peppers, olives, and carrots; sauté veggies for about 7-8 minutes until veggies are soft and a little brown. Then add the garlic let it simmer for about 1 minute. Add turkey and beans let it cook together with the vegetables. Add vegetable stock and tomato sauce. Let it simmer  for about 2 minutes.

You can split the potato in half lengthwise down the middle or use a fork or knife to pierce the top in an square shape, then remove the top of each potato. Top with sour cream/Greek yogurt, shredded cheese, and turkey chili. Enjoy!!

Spicy Turkey and Cheddar Casserole

I've always made things like this a long time ago, but they were NEVER healthy. I use to make things like hamburger helper... Yup, I know that was NO GOOD! Now that I am living a healthy and fit lifestyle I have changed the way I eat and look at foods. Who says you can't eat these things and it can be healthy and still taste GREAT! Try it and tell me what you think!

Spicy Turkey and Cheddar Casserole

Recipe by: Ginnie (Me)

Ingredients:
1lb lean ground turkey
1-2 boxes of Annie's Homegrown Organic Macaroni and Cheese (or pasta of choice)
1 tbsp olive oil
1/4 cup onion
1/2 cup red pepper
1/4 cup green pepper
1/2 cup celery
1/2 cup carrot
medium yellow or red tomato 🍅
 1 tsp kosher salt
cayenne pepper (optional spicy to liking)
 1 tbsp dried parsley
 1 tsp paprika
1/2 - 1 cup reduced fat cheddar cheese
 cooking spray

Prep all veggies chop to desired size. As for the carrots slice and then cut in half.

Place turkey in a large non-stick skillet. Let the turkey cook in high heat until brown adding the seasoning as you go along. Add kosher salt, cayenne pepper (spicy to your liking), paprika, and parsley. Once fully cooked take it out and set it on the side.

In a pot put water to boil and add macaroni to the pot in high heat stirring occasionally so pasta doesn't stick. Make sure pasta is not too soft but not too hard. Leave it somewhat in the middle since it will continue to cook in the oven.

Reduce fire to medium and add olive oil to skillet. Add onions, red and green peppers, celery, and carrots; sauté veggies for about 7-8 minutes until veggies are soft and a little brown.

Preheat oven 350 degrees. Return turkey back into the skillet along with tomatoes let it cook for about 3 minutes.

Spray your casserole dish with cooking spray I use this trick for easy clean up. Then place macaroni into dish add one packet of powder cheese from the box; spoon meat mixture on top of macaroni add one part of cheese and mix altogether. The remaining part of cheese sprinkle on top evenly.

Cover dish with foil and bake for about 25-30 minutes. Remove from oven and let it stand for about 10 minutes. Divide for about 8 servings and ENJOY!
